1 teaspoon salt
1/2 teaspoon pepper
1 onion
4-5 black peppercorns
1-2 bay leaves, crushed

Direction:

Preheat the oven to 150°C (300°F).
Scale, clean and rinse the fish. Bone and cut into fillets.
Sprinkle fillets with salt and pepper.
Roll them up, beginning at the tail end.
Place tightly together in a jar.
Peel and slice the onion. Place between and overr the herring rolls. Sprinkle with peppercorns and bay leaves.
Cover with a lid or foil.
Place the jar on towel (to keep it from moving) in an oven pan. Add hot water to reach halfway up on the sides. Bake 10-12 minutes, until the fish is done.
Serve directly from the jar with rye bread, boiled potatoes and horseradish cream, or with sour cream and chives.
