Sprinkle the yeast in a mixing bowl. Pour in lukewarm water and loosen up the yeast. Add salt and stir in flour until it begins to pull away from the bowl and is elastic. Set the dough aside to rise approx. 1 hour in a lukewarm area well-covered.
Place dough on a floured surface and divide into 16 pieces, form into balls. Roll out in flate circles approx. ¼ inches thick and 7 inches in diameter. Put on greased baking sheet or baking paper. Allow the pita dough to rise again well-covered approx. 1 hour.
Bake them at 500°F on the top rack approx. 2-3 minutes. Turn over and bake on the other side for the same length of time. The pitas are a success when they are light in color and hollow inside.
Cool on a wire racks under a towel. Pita bread can be frozen and warmed before serving.
