350 g (10 ounces, 4 dl, 1 2/3 cups) dried yellow peas
2 liters (quarts) water
1 onion, chopped
500 g (1 pound) lightly salted pork shoulder og belly, in 1 piece bacon rind
2 teaspoons thyme
1 carrot, diced
1/5 leek, diced
freshly ground white pepper

Yellow pea soup (ertesuppe).


Soak the peas in cold water overnight.
Rinse and drain the peas. Combine with the water, onion, pork, bacon rind and thyme. Bring to a boil and skim well.
Simmer until the peas and pork are done, about 1 hour.
Remove the meat and cut into 5 mm ( ¼”) cubes.
Remove the pea hulls with a whisk or slotted spoon.
Cook the carrot and leek in the soup 2 - 3 mintues, then add the meat. Season with salt and pepper.
Serve hot.
