Ingredients

4 servings

6 spiced herring fillets (packed in rosy brine in large tins)
milk or water
3 large onions
3 dl (1 1/4 cups) water
3/4 dl (1/3 cup) 7% vinegar
1 1/2 (2/3 cup) sugar
1 teaspoon ground allspice
1 teaspoon black peppercorns
3 bay leaves
1/2 dl 3 1/2 tablespoons) aquavit

Direction:

Soak herring fillets in milk overnight.
Peel and thinly slice the onions.
Bring water, vinegar, sugar and seasonings to a boil. Cool.
Cut the herring fillets into 12 mm (1/2") slices and layer with the onion in a jar. Pour over brine to cover.
Refrigerate at least 24 hours before serving.
Just before serving, pour over the aquavit.
Serve with rye bread.
