Direction:

Layer the brisling with the salt and sugar in a jar or bowl. Place a weight on top and marinate 10 days. Stir carefully once a day. The brine should cover the fish completely.
Clean and rinse the fish. Skin, bone and cut into fillets.
Dry well before arranging on a serving plate.
Serve with boiled potatoes, flatbrød, butter, beer and aquavit.
