1 kg (1/2 pounds) rhubarb
4 liters (1 gallon) water
1 cinnamon stick (optional)
3 ½ dl (1 ½ cups) sugar
1 dl (scant ½ cup) potato starch
3 tablespoons cold water

Direction:

Wash and peel the rhubarb. Cut into 4 cm (1 1/2 “) lengths.
Bring the water and cinnamon bark to a boil. Add the rhubarb and simmer 5 minutes. Remove the cinnamon. The rhubarb falls apart easily if overcooked. Stir with a whisk and remove any rhubarb that sticks to the whisk.
Sweeten with sugar. Stir potato starch and water together and stir into the soup. Cook until thickened.
Chill before serving.
