2 cups all-purpose flour
Artificial sweetener equivalent to ¾ sugar. Natreen
2 tsp. baking powder
2 tsp. cinnamon
1 ¼ oil
4 large carrots

Whip eggs. Add flour, sweetner, baking powder and cinnamon. Peel and grate the carrots. Stir carefully.

Pour the mixture in a greased cake pan and bake 325ºF in the middle of the oven approx. 40 min.

Cool before slicing.

Note:  Use sweetener that is very similar to sugar in quantity.
