tortillas

Enchiladas sauce:
1¼ cups water
½ tomatoe puree
Taco / Enchiladas Seasoning Mix

Filling:
14 oz. ground beef
1 finely chopped onion
1 finely chopped garlic clove
1 green bell pepper (chopped)
1 can kidney beans
 1¼ shredded cheese (cheddar, Jarlserg)
3/4 cup sour cream

Enchilladas.

Direction:

1. Heat up oven to 400°F

2. Heat water together with tomatoe puree and seasoning mix. Stir while heating.

3. Brown ground beef in a little oil (or butter). Add onion, garlic and bell pepper towards end of frying and let sauté awhile.

4. Add ¾ of sauce to ground beef and let simmer on low heat 5 minutes.

5. Divide meat sauce and cheese in each tortillas and roll them together. Place tortillas in a greased ovenproof dish.

6. Blend sour cream in with rest of sauce and divide over the top of each tortilla. Finally sprinkle cheese over and if desired decorate with olives and/or jalapenos.

7. Bake tortillas 15-20 minutes or until the cheese melts.
