(T-bone steak with potatoes)

Baste steaks with oil. Season them with salt and pepper, and fry them on a grill over charcoals or pan. Regulate the grill or baking time to your taste.

Wash the potatoes well. Dry them with a piece of kitchen paper and rub them well with fat, Place them side by side on an oven rack or in an ovenproof form. Use a little salt so that the under side will not be burnt. Some prefer to cover the potatoes totally with salt, but this is not necessary. Bake potatoes on 325ºF for 1 hour.

When they are ready, take them out and roll them between hands or under a hard surface so that the inside loosens up easily. Cut a cross over them and press so that the potatoes open a little. Put apat of butter in the opening. Season as desired.
