1 1/2 tablespoons sugar
1/4 teaspoon saltpeter
sliced onion
sliced leek

Rinse the herring, but do not clean.
Layer in a jar.
Bring the milk, sugar and saltpeter to a boil. Cool, then pour over the herring. Refrigerate 10 - 14 days. Remove the herring from the brine. Clean, skin and bone the herring. Arrange on a servering platter with onion and leek rings. Serve with pickled beets. Bergen kringle, beer and aquavit.
