2 hard-cooked egg yolks
1/2 teaspoon mustard
1/2 teaspoon pepper
2 tablespoons soy oil
1 tablespoon 7% vinegar
1-2 teaspoons sugar
3 tablespoons chopped parsley

Soak the herring in cold water overnight.
Clean and rinse the herring. Skin, bone and cut into fillets.
Cut each fillet diagonally into 3-4 pieces. Arrange on a flat dish. Mash the egg yolks. Add mustard and pepper. Stir in oil and vinegar, a little at a time. Season with sugar. The sauce should be smooth and shiny.
Pour the sauce over the herring and garnish with barsley.
Serve with bread or boiled potatoes and beer.
