Lutefisk (dried cod treated with lye).

Direction:

We recommend that you cook the lutefisk without water in an oven. Warm the oven to 200 degrees. Lay the fish on a plate with the skinside down. Sprinkle over with salt.Cover with aliminumfolie. Put it into the oven for about 40 minutes. Less fish needs less time. Cut the bacon in dices and fry on low heat so the fat smelts and the dices get crispy.

Green peas stew:
Make a thickener of milk and wheatflour. Mix into the stew and let it boil for 5-6 minutes. Taste with salt. You can also buy a peastewing, read the instructions on the package.

Serve the lutefisk warm on warm dishes with green peastew, cooked potetoes, baconfat and crispy bacondices. Coarse salt, freshly ground pepper and mustard should be placed on the table. You can also serve with flatbread and lefse. People even serve melted goat cheese.
